When up in Boston Adrienne and I got a sandwich to share at a cafe in Harvard Square. It was much better than I expected, given the ingrediants (and I ordered it!): sweet potato, apple, cheese, onion, walnuts and a maple vinagrette. We liked it enough to try to re-create it, so Adrienne did just that, but as a salad:
We forgot the walnuts, but it was quite good. Only thing we might change is to cut the individual pieces smaller, so the flavors meld better in the mouth. Short recipe and whole dinner pic after the jump.
Sweet Potato Salad – choose your own proportions!
Cut sweet potatoes into 1/2″ cubes and toss with oil or melted butter, mix with some salt and brown sugar and roast until soft but still firm – not too long.
Cut up some green tart-ish apples into similar size.
Cut red onion in small slivers
Find a recipe for maple vinagrette – ours had real maple syrup, oil, red wine vinegar and some dijon
Toss all together, with crumbled goat cheese
If you remembered walnuts (preferrable roasted), add those (probably chopped up)

Here’s the maple vinaigrette recipe that I got from RealSimple.com
1 tablespoon maple syrup
1 teaspoon Dijon mustard
1 tablespoon red wine vinegar
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
2 tablespoons extra-virgin olive oil
In a small bowl, whisk together the maple syrup, mustard, vinegar, salt, and pepper. Whisking constantly, slowly add the oil; set aside.
David thought that the salad could have used a bit more vinaigrette, so you may want to double the recipe.
